Matcha Latte Protein Bites (Paleo)

Paleo and vegan-friendly, these matcha latte protein bites are sweetened with dates and filled with healthy fats from coconut and almonds.
  • 12 medjool dates, pitted
  • 1 cup shredded coconut
  • ¾ cup super-fine almond flour
  • 2 scoops Sprouts Matcha Latte Vegan Protein
  • ¼ cup water
  • 1-2 Tbsp. matcha powder
  1. In a blender, add the dates, coconut, almond flour, matcha latte protein powder and water. Blend until a dough is formed.
  2. Pat the dough firmly and evenly into the bottom of a 9-inch springform pan. Cover with plastic wrap, and refrigerate for an hour.
  3. Dust evenly with matcha powder, cut and serve.
