I have a new addiction, one that involves bacon – kind of. Honestly, I was not skeptical about fakin’ bacon, which is a vegan version made of coconut chips. The chips are covered in a smoky spice mixture that includes maple syrup and tamari. A quick bake in the oven and it comes out perfectly crisp. This stuff is amazing! I can’t stop snacking on it.
I should let you know I didn’t cook mine for 20 minutes. It was actually done after 10. I must have a pretty powerful oven (or one that needs to be calibrated). The salt called for in the recipe was left out too because the tamari I used gave it enough flavor. Next time, I might add freshly ground black pepper or perhaps cayenne because I like spicy things. So there it is, another vegan recipe winner.
