I wish I could say I dreamt up this cake. Instead, I can only tell you I dream of it. I found this mocha and black bean mousse cake on Green Kitchen Stories some time ago. It was my first homemade healthy dessert that I served to my sister on her birthday. Despite her hesitation and probably disappointment that I didn’t pick up something traditional, like a decadent chocolate cupcake or sweet confetti-filled frosted yellow cake, she tried it and was amazed as I was to discover it was heavenly. The coffee matched perfectly with the cocoa, as expected, and the black beans gave the mousse such a creamy texture. The crust had a bit of crunch from the hazelnuts that I really liked as well. Together, the contrast from the luscious mousse to the naturally sweetened crust was like a five-star treat. I’ll be making this again for sure.
