For the young at heart, my Sparkling Wine Float with Raspberry Sorbet is pretty, sweet and tart. Hitting all the checkboxes for my ideal dessert cocktail, this Rondel GOLD Brut Cava drink starts with a quick muddle of mint.
When muddling herbs, you want to start with a clean, empty glass. Drop the herb leaves into the glass and extract the essential oils by gently placing the muddler on top of the leaves, pressing slightly and rotating the tool a half turn. The weight from the muddler does most of the work. It is important that you do not mash or grind away at the leaves.
Now that the technical part is out of the way, you should just make this drink. One sip will take you back to days of drinking homemade sodas. Mmm…those were the best. However now, your senses will waken with the freshness of minty flavors swimming in a sea of sparkling raspberry-flavored wine.

- raspberry sorbet
- Rondel GOLD Brut Cava
- In a glass, add 3-4 mint leaves. Using a muddler, muddle the leaves using 3 half turns.
- Add a large scoop of raspberry sorbet, or two small scoops, to the glass.
- Fill the glass with the cava, to your liking. (Shown here is about 1 cup of sparkling wine.)
