Can you believe Christmas is next week?! Yikes! I am so not prepared. There are still gifts to purchase, a menu to make and so many other things to do that my head is spinning. Not to mention, I’m going to share a real moment with you, my home flooded a couple of days ago. Yes, just in time for the holidays. Not to worry, crews are onsite mitigating the problem and by the new year, at the latest, our home will be back to normal.
So you know, it is more important than ever for me to build a Christmas menu of simple eats. This not only gives me time to tend to urgent matters, but also ensures that I get to enjoy Christmas dinner with my loved ones, rather than slaving away in the kitchen. Of course, simple doesn’t mean lacking in flavor. In all actuality, it involves super fresh ingredients that showcases food at its natural best.
A dish I’ll be sure to prepare is this Roasted Carrots with Lemon Vinaigrette, which I’m sharing on REstyleSOURCE. Make sure to visit the link to find a delicious recipe featuring freshly harvested carrots dressed with lemon juice infused with roasted garlic.
