We are just days away from waving sparklers underneath the boom of fireworks. I’m super excited! Fourth of July is probably one of my favorite holidays because it’s the first national holiday my husband and I spent together back in our dating days. Plus, he was in the military, so that makes it even more meaningful.
I’m sure your fridge is packed like mine with food ready for the grill. Still working on desserts, I thought I’d share a tip for making an easy patriotic cake. Using store-bought cake mix and icing, you can prepare a quick cake that can be frozen in advance. The night before your party, place the cake in the refrigerator to thaw. Rinse a variety of berries under a cold tap and tumble them onto the cake just before serving. I chose strawberries, blueberries, raspberries and even blackberries for a bit of depth. If you have icing left over, I suggest putting a dollop in the middle of the cake before adding the berries. It’ll give the cake height, and guess what, you don’t have to purchase as many berries.
