If you follow me on Facebook or Instagram, you may have seen a behind the scenes picture of my Almond Butter Cups. This idea came to me at my husband’s softball game, while chatting with a friend. With the crack of the bat in the background and cheers from the dugout, I still seemed to have food on my mind. What’s new?
Anyways, my friend was well on her way to getting fit and looked great. I, of course, was super happy for her and a little envious knowing that I have a long way to go to get back into marathon shape. Nonetheless, it was still necessary to eat healthy and find a solution to divert my sweet tooth cravings.
So it came up…guilty pleasures. For her, it is Reese’s peanut butter cups, and I’ll admit I can’t help myself either being around an unopened package of these salty, sweet treats. They just taunt me until I devour one too many.
After much discussion, and still watching the game in the background, we came up with the idea for Almond Butter Cups. I had to take on the challenge of creating a healthier peanut butter cup recipe. A couple of weeks later, fresh from the refrigerator emerged Almond Butter Cups made of dark chocolate.
I handed a few to my husband with a cold glass of milk and waited for his response. The verdict: decadently delicious. His advice, you only need a couple to be satisfied. Proud of the outcome, I tried one myself before packaging a few in a bag to send to my friend as a thank you for helping me come up with this idea.
