Ahi Poke Bowl

This easy ahi poke bowl is just what you need when fresh and light is what you're after.
Ginger Sesame Rice
  • 1½ cups cooked jasmine rice
  • 2 tsp fresh ginger, chopped
  • 1 tsp roasted sesame seeds
  • 1 tbsp white vinegar
Sriracha Soy Sauce Ahi
  • 1 ahi tuna steak, diced into ½-inch cubes
  • 2 tsp Sprouts Organic Sriracha Sauce
  • 1½ tsp Sprouts Organic Soy Sauce
  • ½ tsp roasted sesame seeds
  • 1 tbsp green onions, chopped
Poke Bowl
  • 4 cups leafy greens, such as romaine lettuce
  • 1 mango, skin and pit removed and diced small
  • ½ cucumber, shaved into strips with a vegetable peeler
  • ½ avocado, skin and seed removed and sliced thinly
  • 2 radishes, sliced thinly
  • 2 tbsp macadamia nuts, chopped
  • 6 sheets Sprouts Teriyaki-Flavored Roasted Seaweed Snack
  1. Prepare the rice by combining all the ingredients in a bowl. Cover the bowl with plastic wrap and set aside.
  2. Prepare the ahi by mixing all the ingredients in a bowl. Allow the mixture to chill covered in plastic wrap for at least 30 minutes in the refrigerator.
  3. Assemble the dish by dividing the leafy greens evenly among two bowls and then equally distributing the rice in a mounded shape. Divide the remaining ingredients and ahi mixture between both bowls, making sure to sprinkle the chopped nuts last. The roasted seaweed snack can be tucked into the side of the greens for easy eating.
