Oh, hello vegan Friday. The weeks sure do fly by and with that brings us to another recipe inspired by hot for food. This week I chose to conquer a quick breakfast inspired by smoothies Lauren has shared over the years. For me, photoshoot days create morning time restrictions I’m not used to on a daily basis. I’m definitely a person, who wakes up hungry. Whether I’m off to work or train, I know having something that keeps me satiated for a long period of time is ideal. There’s not always an opportunity to make a hot, filling breakfast unfortunately. In those moments, I turn to oatmeal smoothies. Today’s flavor is an American classic – peanut butter and jelly. I’ll be honest, my first PB+J sandwich was on July 4th of this year. Prior to that, I had the flavor combo a handful of times in the form of yogurt. I liked it much better chilled, so without a doubt a smoothie is perfect.
When recreating this for yourself, personalize it to your preferences. For example, add more oats for a thicker consistency. The same can be achieved by freezing your bananas slices overnight before blending. Use whatever jam, nut milk, yogurt and peanut butter you’d like, but to keep it vegan, make sure to read those labels closely to ensure there are no traces of dairy or animal products. In terms of sweeteners, stick to maple syrup, brown rice syrup, agave, stevia or dates. And I didn’t leave out honey on accident. Honey is not vegan-friendly; you can read more about it here. Other things worth adding, in my opinion, are chia and hemp seeds as well as coconut.

- 1 ripe banana
- ¼ cup quick cooking oats
- 1 tbsp natural creamy peanut butter
- ½ cup nondairy yogurt
- ½ cup nut milk
- ¼ tsp ground cinnamon
- ¼ tsp vanilla extract
- sweetener, to taste (see the post for recommendations)
- 2 tbsp favorite jam
- In a blender, add all the ingredients, except the jam. Blend until smooth.
- Spoon the jam into the bottom of a glass and top with the smoothie. Serve.
