I am so fond of lychee. The round pearl-like fruit is sweet and something I grew up eating in desserts. My favorite was a drink my mother used to make. Heavily chilled with ice, lychee fruit would hangout alongside jackfruit and grass jelly. As a child, I loved it! As an adult, I still love it, but realize that perhaps the amount of sugar used to sweeten the drink is far too much to enjoy on a daily basis. I know, it’s quite sad. But that’s not to say lychee isn’t a good fruit to eat (or drink). It is actually super nutritious. It contains vitamin C, B-complex vitamins, antioxidants and dietary fiber.
Because I can’t give up on one of my favorite childhood fruits, I had to make an alternative. One that’s packed with valuable nutrients gained from ingredients, such as hemp, ginger and spinach.
