There is something quite satisfying about marinating foods. Sure, we could eat foods the way they come, but why would we when there are so many ways to add interest and flavor? Take feta for instance. It’s a salty cheese that tastes wonderful crumbled over a salad, omelet or gyro. But a smart person would notice that this particular cheese easily serves as a blank canvas for other flavors.
So how do you add flavor to feta? Easy! Drown it in a good extra virgin olive oil and make sure to tuck in fresh herbs, spices and citrus peels. Then refrigerate so the flavors have time to infuse the cheese. How can something simple be so good? I’ll tell you. It’s all about that marinade.
- 1 (8 oz) block of feta, diced into ½” cubes
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1-2 tsp crushed red pepper
- fresh lemon peel
- extra virgin olive oil
- In a pint-sized jar, add all the ingredients. Fill the jar with enough extra virgin olive oil to cover the feta and other ingredients. Refrigerate for at least 2 hours before using.
