So I haven’t really shared my health and fitness journey publicly, primarily because I am quite private. However, following the longest period of clean eating in my life (by the way, I’ve never eaten clean longer than a few days), I feel like it’s time to share. Share little by little I mean. I don’t want to overwhelm or bore you with too much upfront. But I figured my experience can help some of you achieve your personal goals.
First and foremost, I’ve been lifting weights heavily for nearly a year. Exercising, for the exception of a two-year period, is typically not an issue for me because I like to feel like I’m in “beast mode.” It boosts my confidence knowing that I’m becoming stronger. Where I struggle most is my diet. Formerly an over-indulger, I have learned to eat intuitively and consume only the best of foods. Don’t get me wrong, I crave a soft pretzel from the mall and sometimes daydream about my cheat days, of which I’ve had none for nearly five weeks! Crazy, I know, but this willpower to shred body fat to preserve my health is totally worth it.
Since starting my shred period, I’ve lost about seven pounds. On a 4’11” person, that’s quite significant. For the first time in a while, I can see true definition in my arms and legs, and dare I say, I think my abs are peaking through ever so slightly. I have yet to get my new body fat percentage, but when I do, I’ll share the progress I’ve made.
In the meantime, I’m leaving you with one of my favorite snacks – rawnola, a mock granola that takes only three ingredients to make. There are no artificial sweeteners, fake foods or bad ingredients in this perfectly nutty and coconut-y mix. I find myself noshing on rawnola when I need a snack. It’s great with yogurt or for topping off protein pancakes and waffles. It’s a lifesaver if you have a sweet tooth.
- 1 (8 oz) container dates, pitted
- 1 cup raw cashew pieces
- 1/2 cup unsweetened shredded coconut
- Place all the ingredients into a food processor or heavy-duty blender (I used a Ninja). Pulse until the ingredients resemble granola.
- Store in an airtight container in a pantry until ready for use.
