It is absolutely rare for me to have so many cranberries in our home, but when the holidays arrive, my refrigerator overflows of crimson. Luckily, there are a billion ways to use cranberries beyond Thanksgiving. One of my favorites starts with soft, fluffy pancakes.
Tada! My Pear Pancakes with Cranberry Sauce highlights the perfectly tart fruit, which matches well with the mild, yet sweet flavors of thinly sliced Bosc pears. I think my favorite part is the pear pancakes simply because it’s lovely to look at.
