Recently, I shared a Walnut Pesto recipe that was simply delish! Now I want to show you how it can be used for more than just pasta. This is my Italian Sausage & Pesto Crostini that’s packed full of flavor. Sausage is a great option to include when you want something substantial that can still hold its own when served in small quantities. The sausage is a pork filling that has been encased with lots of herbs, spices and a little crushed pepper for heat. I browned it on the stove and then allowed it to rest for 10 minutes so the juices could redistribute before slicing.
The sausage sits atop thin slices of toasted bread that’s been brushed with rich olive oil. A small spoonful of pesto, shavings of parmesan and freshly cracked black pepper and there you have it – an easy appetizer that also makes a great meal.
I actually made these for my friends who’ve recently welcomed a new little boy. (Congrats!) It’s amazing how many compliments I received. Easy, quick and budget-friendly…that’s a winner in my book.
