Just until the last couple of years, I never took the time to maintain my knives mostly because I still had the “college” knives you purchase when you’re young and naive. You know the kind – inexpensive, flimsy and does the trick for a year at best. But now I’m all grown up with a huge passion for food, and it would be a tragedy if I didn’t upgrade right? All those poor tomatoes and roughly filleted fish. *sigh*
