Sometimes there’s no time to kick back with ingredients to make a yummy baked dessert. Sure, if there was an extra hour in the day, we could possibly enjoy a warm baked treat, but instead, we are stuck with 24 hours. So how can you maximize that 24 hours to complete your homemade meal with a smile? A microwave of course!
I don’t know of a time when microwaves did not exist. While this speedy machine wasn’t used much in my home growing up, the few times it was put to use resulted in a quickly heated dish that was almost like dinner right off the stove (the key to microwaving is to warm it in small increments making sure to stir between each).
So for dessert for a friend’s birthday, we enjoyed a bowl of chilled chocolate pudding that was prepared right in the microwave. After making a large meal, I just wanted to serve something yummy that didn’t take much time to prepare so I could enjoy the company of my friend. This was just the right dessert for the occasion.
I will admit this was the first time I’ve ever had chocolate pudding. Crazy right?! Shocking even. I couldn’t believe I had gone years without this chocolaty goodness. Well, that won’t happen again and because this is so easy to make, you can bet we’ll be enjoying more chocolate pudding in the future.
- 1/2 cup white sugar
- 1/3 cup unsweetened cocoa powder
- 3 tbsp cornstarch
- 2 cups milk
- 2 tsp vanilla extract
- In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in the milk a little at a time so the mixture does not have any dry lumps.
- Place in the microwave and cook for 3 minutes on high. Stir, then cook in 1-minute intervals, stirring between cooking times for 2 to 4 minutes or until shiny and thick. Stir in the vanilla.
- Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming and chill in the refrigerator. Serve cold.
