I love it when sweet foods have just a bit of kick from something spicy like chocolate and chili. You almost need that spiciness to cut through the sugar and elevate the dish into something a bit more refined. My Sweet and Spicy Garlic Chicken is a great example of this. Instead of starting off sweet and adding something spicy, I flipped the order and it still resulted in a delicious entree. The sweet and spicy sauce coats the chicken so when it bakes, the chicken actually absorbs the flavors. And because the chicken is cooking on such high heat, I think it actually helps retain a lot of the juices keeping the chicken moist. I was very pleased with the results and can’t wait to alter this simple recipe again and try it with something a bit more bold like curry.
Ingredients
- 4 boneless skinless chicken breasts
- 4 garlic cloves, minced
- 1 tsp crushed red pepper
- 3 tsp olive oil
- 4 tbsp brown sugar
Instructions
- Preheat the oven to 450 degrees F.
- In small pan, sauté the garlic and pepper with the oil until the garlic is tender. Remove from heat and stir in the brown sugar.
- Place chicken breasts in a baking dish and cover with the brown sugar mixture.
- Bake uncovered for 20 minutes. Allow the chicken to rest for 10 minutes before serving.
