Sweet and Spicy Garlic Chicken

I love it when sweet foods have just a bit of kick from something spicy like chocolate and chili. You almost need that spiciness to cut through the sugar and elevate the dish into something a bit more refined. My Sweet and Spicy Garlic Chicken is a great example of this. Instead of starting off sweet and adding something spicy, I flipped the order and it still resulted in a delicious entree. The sweet and spicy sauce coats the chicken so when it bakes, the chicken actually absorbs the flavors. And because the chicken is cooking on such high heat, I think it actually helps retain a lot of the juices keeping the chicken moist. I was very pleased with the results and can’t wait to alter this simple recipe again and try it with something a bit more bold like curry.

Sweet and Spicy Garlic Chicken

Cook Time: 20 minutes

Yield: Serves 4

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 garlic cloves, minced
  • 1 tsp crushed red pepper
  • 3 tsp olive oil
  • 4 tbsp brown sugar

Instructions

  1. Preheat the oven to 450 degrees F.
  2. In small pan, sauté the garlic and pepper with the oil until the garlic is tender. Remove from heat and stir in the brown sugar.
  3. Place chicken breasts in a baking dish and cover with the brown sugar mixture.
  4. Bake uncovered for 20 minutes. Allow the chicken to rest for 10 minutes before serving.
