Breakfast Pizza

Growing up I was that little schoolgirl who loved the cafeteria breakfast pizza. I know that sounds awful, but when you ate nothing but Vietnamese food at home, the treat of having something like pizza that at the time seemed so American (I know it’s Italian) was such a delight. Now that I’m all grown up, I laugh at the thought of me enjoying the lunch lady-made pizza and secretly hoping my friends wouldn’t finish theirs so I could. Oh, those were the days.

Today though, I am enjoying a much better breakfast pizza that is made with flaky puff pastry and topped with ingredients that not only create a vibrant and pretty pizza to look at, but also tastes so yummy when I break the almost over-easy egg with my fork to spread the creamy yolk over my entire slice. Easy and delicious, such a great way to start the day.

Breakfast Pizza

Cook Time: 20 minutes

Yield: Serves 6

Ingredients

  • 1 puff pastry sheet (half a box)
  • 1 on-the-vine tomato, thinly sliced
  • 1/2 cup frozen spinach, after thawed and drained
  • 3 tbsp grated parmesan
  • salt & pepper
  • 6 eggs

Instructions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Place the puff pastry on the prepared baking sheet and roll out the pastry to a 10”x15” rectangle. Use a fork to thoroughly prick the pastry while making sure to leave a border that is 1” wide.
  3. Layer the pastry with the tomato slices, and bake for 10 minutes.
  4. Remove the baking sheet from the oven and top the tomatoes with spinach and parmesan, sprinkle with salt and pepper to taste and crack the 6 eggs over the top.
  5. Bake for approximately 10 minutes, just until the eggs are slightly over-easy. Allow 15 minutes for the pizza to cool on the baking sheet before slicing.
