Muffins that’ll make you think, “One more…just one more.” My Spiced Walnut Muffins are quite the flavorful treat and make a great addition to any breakfast or brunch. With cloves and cinnamon to spice up the simple batter plus walnuts galore, I am in heaven when I bite into this dense muffin.
Next time, I may try adding ripe bananas and a sweet glaze. It could be out of this world!
Spiced Walnut Muffins
1 cup sugar
1 cup water
1/2 cup unsalted butter, melted
1 tsp cinnamon
1/2 tsp ground cloves
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups chopped walnuts plus extra for sprinkling
Preheat oven to 350 degrees F and prepare a muffin tin with cupcake liners or nonstick spray.
In a bowl, combine the sugar, water, butter, cinnamon and cloves. Set aside.
Using a separate bowl, mix the flour, baking soda and salt together. Add the butter mixture and beat the batter until thoroughly combined. Stir in the walnuts.
Fill each section of your prepared muffin tin two-thirds full with batter. Sprinkle the additional chopped walnuts on top. Bake for approximately 18 minutes, until a toothpick comes out clean. Cool for 5 minutes before transferring the muffins to a wire rack to cool completely.
