Remember the yummy roasted asparagus recipe that I said was so versatile? Well, here is a great way to incorporate that delicious veggie into a chilled pasta dish that only takes a little time to prepare. This pasta salad was inspired by Greek flavors, and best of all, it has none of that mayo-y goop that absolutely hates my waistline. Also, I’m not much of an olive lady, but if you like olives, I’m sure it would be great in this dish along with roasted garlic.
Orzo Pasta Salad
Serves 12
Ingredients
1 lb orzo pasta
1 cup red onion, chopped
1 1/2 tsp garlic, minced
1 cup sun-dried tomato, julienned
1 lb roasted asaparagus
zest and juice of 1 lemon
1 cup crumbled feta cheese
salt
pepper
Directions
Cook the orzo pasta using the directions on the package. Once cooked, strain the pasta using a colander and then transfer the pasta to a large bowl. Allow the orzo to cool until warm to the touch. Combine the remaining ingredients into the bowl and season with salt and pepper to taste. Cover the bowl with plastic wrap and refrigerate for at least 2 hours before serving.
