Who knew you could incorporate so many nuts into one dessert? I didn’t until I made this treat. If you like to bake, I’m sure you can relate to the overflowing pantry of extra ingredients you’ve accumulated from past yummies. For me, it always happens to be a variety of nuts that end up going stale before I remember to use them. But this time, I didn’t forget and was able to create this fantastic bar of nuttiness. And it’s easy to make too! *happy dance*
Nut Mix Bars
Serves 16
Ingredients
1/2 cup + 2 tbsp all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
1 cup packed light brown sugar
1 egg
1 tsp vanilla
1 cup mixed nuts, chopped (I used hazelnuts, walnuts and pecans.)
Directions
Preheat the oven to 350 degrees F. Grease an 8″ square baking pan.
In a bowl, combine the flour, baking soda, salt and brown sugar. Set aside.
Using a whisk, mix the egg and vanilla together in a separate bowl until combined. Then, use a spatula to stir the dry ingredients into the egg mixture. Once incorporated, fold in the nuts reserving 2 tablespoons of nuts.
Transfer the batter to the greased pan and spread out evenly using your hands. Sprinkle the remaining nuts over the top of the batter and bake for 25 minutes. Do not over bake.
Remove the baked dessert from the oven and allow it to cool to room temperature. Cover with plastic wrap and allow it to set overnight before cutting. When ready, cut the bars into 2″ squares.


















These sound great! I’m sure I have lots of leftover nuts from other recipes that I could use for this. I may even throw in some dried cherries that I think I have in my pantry! Thanks for sharing.
