Grilled Cotija and Tomato Sandwich

Talk about a wonderful and easy sandwich to make. You should give this a try! 
 
Grilled Cotija and Tomato Sandwich 
 
Ingredients
  • favorite bread, sliced
  • mayo
  • cotija cheese
  • tomato, sliced 

Directions

  1. Preheat your pan on medium heat.
  2. Toast the bread.
  3. While the bread is toasting, slice a piece or two of cotija and cook until crispy and golden brown on both sides. The inside will be deliciously soft.
  4. Assemble your sandwich: bread, mayo, cheese and tomato. No salt necessary, the cotija takes care of that.
  5. Enjoy!
