Thank you to Jan who submitted the Cherry Choc Hopscotch mix! This cookie definitely left me speechless because I loved the name and because the combination was so interesting…butter cookie, white chocolate, butterscotch and dried cherries. The challenging part was finding the right spices to add to the mix, and after some trial and error, I found that the addition of my homemade vanilla extract, a bit of anise and extra cinnamon was the perfect balance to offset the tangy flavor of the cherries while leaving some mystery to the cookie’s delightful flavor.
Who would have known that such a light cookie could hold so much flavor? Also, if you are wondering about the design of the cookie, I thought it would be fun to try a marbled look rather than just throwing the chips and cherries into the mix. I am loving the colors!
