I took it upon myself to make my Lemon Poppy Squares a cousin. These are my Raspberry Lemon Squares and probably my favorite of the two. I did a better job cutting these since I froze them first…it makes it a little tougher to cut, but the individual squares end up looking much cleaner. I use this technique with my brownies too.
The colors definitely compliment each other and reminds me of a sunset. Pretty and yummy…perfect.
I did get a few requests for the recipe, and unfortunately, I will be keeping these to myself. But here is a similar recipe that I recommend trying…it is quite good and has received good reviews.
To incorporate raspberry, puree a small container of fresh raspberries, strain to remove the seeds and pulp and then mix into the lemon batter.
For the Lemon Poppy Squares, just add 2 teaspoons of poppy seeds into the lemon batter, pour the batter on top of the prepared/baked crust and then sprinkle some poppy seeds on top before baking.
