This week (or maybe next), I will be experimenting with coloring the dough and changing up the fillings. I want something whimsical, fun and exciting. As far as I know, not many people have done this before and maybe I will be the one to get the trend going.

This is a great recipe. http://www.foodnetwork.com/recipes/alton-brown/sweet-or-savory-pate-a-choux-recipe/index.html A quick note, you can easily spoon the dough onto the baking sheet instead of piping it from a bag. I like this option better because it provides a more rustic look. Good luck!
