This weekend I am hosting a Lia Sophia party. Yes, for me this is definitely different and not typically something I take part in. But my friend is trying to start up her own business, and I am more than happy to host a gathering for her to help launch her side business.
For me, I will be having fun putting together a menu for lunch. One of the things I must consider is that less utensils are always best for parties…finger foods work well with several people if it is not a sit-down meal. Here is what I’m thinking:
Some sort of panini. Maybe chicken with pesto, tomatoes, mozzarella and basil? Or chicken, roasted red peppers, fontina and arugula? Hmm…lots of options. That’s what I love about these sandwiches. I can go French, Italian, Southwestern…it’s so versatile.
Fresh Fruit and Mint Salad. This is from the Food Network Kitchens and sounds really good. Very light, girly and healthy! It doesn’t seem too hard either; I just hope I can find really good fruit to use. For those who don’t live in Arizona, sometimes bananas can be a pain to find; they are never ripe enough. Luckily, I bought some a couple of days ago, so maybe they will be ready in time to use.
This Mediterranean Pasta Salad sounded delicious too. I definitely love sun-dried tomatoes and this might go well with the paninis. I worry about the feta though. Maybe I should make the paninis more Greek-like. Anyways, I think I might add some artichokes to the salad as well…yum.
Dessert anyone? I was thinking of test driving some butter cookies this weekend. Yes, I know…I had another project list I was working on, but I really want to try these out. I love using my cookie cutters and haven’t been able to play with them in a while.
